A Snack The Kids Will Love!
No, for real! They will eat it! I have a confession to make. I have raised a.....ugh I can't even say it out-loud....a picky eater. There. It's my fault, 100% and I own that. But luckily, what she does pick is usually pretty healthy. She doesn't love a lot of sweets and snacks. Give her some white cheddar puffs and a whole apple, and she's a happy girl!
And baking together is second nature for both of us. We love it, but she doesn't always eat what we make. Like, she won't even try it. Unless it's cookies, cookies never fail. So I had some really black bananas, decided to make some bread, as usual, but I tried a few new tactics and guess what....SHE ATE IT! And she loved it!
Not sure if it was the extra responsibilities I gave her during the process, like mashing the bananas, and whisking the eggs, all by herself, or the new ingredients I tried, but she gobbled it up!
So what are these mystery ingredients, you ask? Whole wheat flour, and baby food. I had the whole wheat flour from another project, and I love the texture it adds. So I split the amount of white flour in half, and it was a success!
As for the baby food, wha??? I know, sounds weird. But a long time ago, I started slipping baby food into different foods, I'll put a jar of carrots into pizza sauce when we make pizza, no one knows it's there! Or butternut squash into pancakes, brilliant! I like to get the kind that's called "Just Carrots". It's literally just carrots, no water, nothing. Check the ingredients, don't pay for carrots and water. Just carrots. So, I had a jar of Just Sweet Potatoes, in it went. Delish. Didn't know it was there, and we're eating vegetables guys.
And you may notice the apple pie spice in the recipe, you can use pumpkin pie spice, just cinnamon, whatever you have. I specified Penzey's because it's THE BOMB. Definitely not trying to be a snoot, but if you can get it, you won't regret it.
So give it a try, I think you (and hopefully the kids) will like it. The warmth of the brown sugar, vanilla and spices, yum. And the sweetness of the bananas is perfectly balanced by the nuttiness of the whole wheat flour. It's a keeper.
